Are you looking for something different to do with zucchini? Here’s a unique zucchini recipe the whole family with love.
Some variations you can make are using beans or tofu or any kind of meat instead of the ground meat; use Alfredo, salsa or pico instead of the pizza sauce; add any herbs or spices; add in other vegetables; for dairy free don’t add the cheese, or use a dairy free option (I like Daiya brand).

Zucchini Pizza Boats
Prep time: 15 minutes Total time minutes: 55 Cook time: 40 minutes Serves 8
Ingredients
- 4 medium zucchini (about 8” long)
- 1 lb ground meat
- 2 cups shredded cheese
- 1 jar pizza or spaghetti sauce
Directions:
- Preheat oven to 400F
- Brown ground meat in skillet on medium heat-breaking up & stirring every few minutes. While meat is browning, slice zucchini in half lengthwise.
- Scoop out seeds with a spoon to make boats & place flesh-side up on a parchment lined cookie sheet. When ground meat is browned, remove from heat & stir in sauce
- Spoon into boats & place boats in oven for 30 minutes or until zucchini is done
- Remove from oven & top the boats with cheese Return to oven for another 10 minutes or until cheese is lightly browned
- Enjoy!
You can use any meat or beans, salsa or alfredo sauce or add in other vegetables
